Well, Ello, Ello, Ello. What do we have here? A tasty Italian inspired Tomato Bacon Carbonara recipe that only costs 77p per portion? Yup! Yup you do!
I have gone all BIG on this eat for less malarky which is currently now a fad that has taken over my life. Feel free to join me on this journey. I don’t know where it is going but it feels sorta good. Come on board and buy only what you are going to consume. It also means you have more space in your fridge for wine, beer, Baileys and cocktail cans.
I feel like I need to give you a little bit of background on this just for reference.
I came back from my holiday with an empty fridge after throwing out a good amount of wasted food before I went away. It sort of made me sad as I don’t like waste. With a huge passion for cooking, creating recipes, and challenges, I decided to set one for myself…to waste less AND try to cook for less. Win, win!
I wanted to share this tasty dinner idea with you as I cook this a fair few times a month. It’s also my number one camping dinner, so, very easy to whip up, even on a camping stove.
I shall stop rambling on and get to the freaking point.
Tomato Bacon Carbonara 77p (Per Portion)
This recipe makes 4 potions.
1 onion (22p)
4 rashers of bacon (68p)
2 eggs (23p)
Cheddar cheese, 100g (44p)
Double cream, 150ml (47p)
Spaghetti, 200g (16p)
You will also need the following – Olive oil, tomato puree, fresh garlic/garlic powder, fresh chilli/chilli flakes & milk.
These are my cupboard staples (blog post coming soon) and are not included in the portion cost as these are some of my staple items.
1 teaspoon of olive oil
1/2 teaspoon of garlic powder / 2 cloves of garlic
1 tablespoon of tomato puree
1 teaspoon of chilli flakes / 1 finely chopped fresh chilli
Salt & pepper
Heat a drop of oil in a pan, while this is heating chop the bacon into small pieces, roughly around 1cm then add to the pan and cook for 3-4 mins. Add the onions & tomatoes and cook for a further 10 minutes until the onions are browning, bacon is cooked and tomatoes are juicy.
In a separate pan, pop the spaghetti on and cook for 8 mins.
With the bacon, onions and tomatoes cooking off, grate all the cheese and leave a sprinkle aside to pop on the top of your carbonara once cooked.
In a bowl, crack the eggs and stir in the cheese and give it a good beating.
Add garlic, chilli & tomato puree to the bacon, onion and tomato pan and give it a stir for 2-3 mins on a medium heat.
Now we are ready for it all to come together.
Pour in the egg & cheese mix with some salt & pepper then add in the double cream and a splash of milk then stir for a further 4 minutes until the carbonara sauce starts to thicken.
Drain the spaghetti and toss it into the pan with all the ingredients, making sure the sauce covers every strand pasta.
Pile onto your favourite plate and sprinkle on the left over cheese and a flick of chilli flakes. Voila! Tomato Bacon Carbonara all for just 77p.
